Black Seed Bagels unveils its new concept shop called Black Seed Appetizing at Chelsea Local, a collection of food shops in the lower level of Chelsea Market. During the debut we had a chance to speak with Dianna Daoheung the Michelin-nominated chef and guiding force behind Black Seed Bagels.

Q: What can diners expect at Black Seed Appetizing?
Dianna: All of our current locations are sandwich heavy. This location allows us to expand the menu with some upscale offerings like lobster and truffle cream cheese spreads. We’re also offering six types of smoked salmon, including Norwegian, Irish and Scottish.
Q: Are you nervous at all about moving outside of bagels?
Dianna: No. The People who will be coming here are foodies looking for something special. We are very fortunate to be producing something so New York centric as pizza and bagels.
Q: Why Chelsea Market?
Dianna: Being in Chelsea Market allows us to experiment and collaborate with other vendors, like Seed + Mill and Miznon. It also allows us to stay open later. This location will be open 7 days from 8am to 8pm.
Q: Will you be making everything on site?
Dianna: The bagels will be brought in from our main facility. But all of the specialty items will be made here.
Q: Will you be working at this location for the foreseeable future?
Dianna: Yes.
Q: What do like most about what you are doing?
Dianna: I like that we can experiment, whether it is something Japanese inspired with seaweed and sesame seeds, or going Mediterranean. It’s also cool to see people from all around the world!

Black Seed Appetizing is already partnering with Miznon for its October bagel. For the bagel sandwich, Miznon’s signature roasted cauliflower is mixed with tahini, scallions, tomatoes and green spicy sauce, served on any bagel of the guest’s choice ($8.75).

The location is also offering its own Folksbier, a sour beer made from leftover bagels and second use raspberries and blackberries.
