At 6 Restaurant, Chef Nico Bouter Blends Global Flavor with Deep Hospitality

In the heart of Carroll Gardens, 6 Restaurant is reimagining the dining experience—one intimate evening at a time. Opened this spring at the corner of Court and Nelson Streets, the 34-seat restaurant is a new-American concept shaped by a team with fine dining roots and a passion for warmth: Owner Kirk Love, Beverage Director Eric Torres, and Executive Chef Nico Bouter.
For Bouter, whose background includes Flora Bar, Eleven Madison Park, Agern, and Librije, the vision is clear: “We want to create an environment where people feel taken care of.” At the center of the restaurant is a six-seat tasting table—where an 8-course menu ($165) invites conversation, connection, and thoughtful storytelling. “It’s a shared experience,” Bouter tells Cititour. “Guests can interact and talk. We go over the food and experience together.”
The menu at 6 reflects Bouter’s personal journey with global flavors. “I’m from the Netherlands,” he says, “so there’s a lot of Northern European and Scandinavian influence, with market-driven ingredients.” That sensibility comes through in refined dishes like the comforting Lamb Guiso with carrots, cilantro, and rice, and on the à la carte menu, the Anchovy Toast—one of his personal favorites.
Even the restaurant’s name is a nod to intimacy: six being the ideal number for a dinner party. Guests dining at the tasting table are also offered a candid photo as a keepsake—part of the team’s ethos of offering something meaningful to take home. There's also a wall featuring images of guests.
