Edith’s Sandwich Counter, the Brooklyn-born favorite known for reimagining Jewish comfort food, is bringing some serious sandwich energy to the West Village—and beyond—with the launch of its new monthly collaboration series. The program kicks off this April and will feature inventive sandwich-and-slushie pairings dreamed up in partnership with some of the country’s most beloved eateries.

First up: Philadelphia’s cult-favorite sandwich shop Middle Child, making its NYC debut via Edith’s kitchens. Together, they’ve crafted the Cuban Wollensky—a wild mash-up of a Cuban, a Wollensky, and a Texas Tommy. This limited-edition creation layers Taylor Ham, bacon, Cooper Sharp American cheese, mustard mayo, and sweet & spicy pickles on a warm, pressed Kaiser roll. On the side? A creamy, citrusy Carrot Dreamsicle Slushie.

The collab series continues all summer long with more crave-worthy partners:

• May: Revelie Luncheonette (SoHo's retro American fare)

• June: Saltie Girl (Boston and LA’s seafood darling)

• July: The Wieners Circle (Chicago’s legendary hot dog stand)

• August: Ivan Ramen (NYC’s cult ramen shop with Tokyo roots)

Each collab will roll out new exclusive items monthly at both Edith’s Williamsburg and West Village locations. Come hungry—and fast. These sandwiches won’t stick around.
