Four Seasons Alum Opening El Condor Coffee Roasters in West Village

El Condor Coffee Roasters is a new coffee shop opening in the West Village on Monday, Feb 21. It is determined to flip the traditional coffee shop model from both guest experience and business standpoints and redefine everyday hospitality in the casual dining space.
Behind El Condor is Wilcuma, a full-service hospitality group founded in 2016 from industry vet Nicolas Simon (Four Seasons Hotels & Resorts, Alain Ducasse) and all-star broker Mucjon Demiraj (AC Lawrence, The Bellmark Group, Sihana Realty).
El Condor's West Village location is the first of many to come. Another location will open in NYC this summer, with additional outposts around the country slated to open within the next couple of years. The design of each location will vary depending on city, neighborhood, and building history. The West Village space boasts a white-washed brick wall complemented by natural materials and earthy tones of greens, browns, and reds.
El Condor partnered with Jacob Ibarra of Tenfold Coffee in Houston, TX, to develop the coffee program which will include beans from Sumatra, Ethiopia, Brazil, and Guatemala upon opening. The team has also forged a special relationship with the Mil Cumbres Farm in Panama – located at the foot of Baru Volcano in the Talamanca mountain range – to source Geisha beans (considered among the best in the world). All roasting will take place in-house.
The all-day menu (led by Chef Youssef Aderdour, formerly of Alain Ducasse, LDV Hospitality, and Zuma) takes an Australian-inspired approach, offering a seasonally-rotating selection of fresh baked goods, breakfast/lunch items, as well as plenty of healthy options including Chickpea Toast, House-made Muesli and Morning Congee. El Condor will also offer an assortment of local beers and a rotating selection of wines from the East Coast and South America.
