Haymarket Opens in Chelsea with Former SAGA Alum

A new culinary destination has landed in Chelsea. Haymarket, from Chef India Doris—formerly Executive Sous Chef at two-Michelin-starred SAGA—blends modern European technique with Caribbean soul at 326 Seventh Avenue. Doris, whose training spans acclaimed restaurants like La Trompette and Bibendum in London to a Normandy brasserie, infuses her menu with personal heritage and global precision, from Salt Cod Fritters with habanero aioli to Sardine Linguine with preserved lemon and Braised Oxtail served with crispy cheddar polenta.

Dishes are designed for sharing, from Duck Fat Frites crowned with Royal Sturgeon caviar to the standout Lamb and Mushroom Skewers served with housemade pita and chili sauce. The Roast Half Chicken with peri peri and the Pan-Seared Dorade with anchoïade and spring potatoes round out the entrée lineup. For dessert, don't miss the Strawberry Cheesecake Swiss Roll, Mocha Crème Caramel or the Mango, Coconut, Lime Pudding—a tropical finish to a globally inspired meal.

Beverage Director Chris Figueroa (ex-SAGA, Crown Shy, Overstory) leads the bar program, which leans playful and bold. Think “Hay Barbie,” a vibrant sour with pickled beets and saffron, or the “Lucky Plum,” a savory gin spritz with fig leaf and umeboshi. Tall & Crisp, Shaken & Fresh, and Spirited & Bold define the cocktail sections, with non-alcoholic options just as artfully composed.

The restaurant is a personal milestone for both Doris and Managing Partner Alex Pfaffenbach, who first met a decade ago while working at The NoMad. Haymarket marks their first solo venture together, blending fine-dining experience with warmth, personality, and a lively neighborhood energy. With a striking design by Fogarty Finger and a menu grounded in story and season, Haymarket feels both fresh and timeless—an inviting new chapter in the Chelsea dining scene.
