A caramel apple is the inspiration behind Michelin-starred Jungsik’s new dessert simply called, Apple. Executive Pastry Chef Yoonjung Oh (formerly of Aquavit) designed the new dessert. It’s a hot caramelized apple with dried persimmon and apple cider gel that sits atop a whole wheat sable with granola and a quenelle of Misutgaru ice cream, traditionally made with 7-10 different grains, on the side. Prior to this, Yoongjung Oh revealed a Charcoal and Corn dessert.
The Apple dessert will appear on Jungsik’s seven-course signature menu, priced at $265 per person.
