Koete Omakase Offers Luxe Sushi Without the Wait

There’s a new reason to dine on Broadway. Koete Omakase, from mother-daughter team Denise Chung and Ayana Chen, is now open in Midtown West, offering a refined yet accessible omakase experience with chef-driven precision and warm hospitality. Designed for business lunches, curious tourists, and pre-theater diners alike, Koete delivers a 10-course lunch ($60) in under an hour and a 15-course dinner ($100) in 90 minutes.

The name Koete, meaning “to go beyond,” was chosen by Chef Jason Lin, a sushi veteran with nearly three decades of experience. At the sleek 20-seat counter, Lin prepares each course with a balance of omakase tradition and modern flair—drawing on influences from Japan, Spain, and France. Expect pristine cuts like Botan Ebi shrimp, Hotate scallop, Hokkaido Uni, Shima Aji, Otoro tuna, and A5 Miyazaki Wagyu, served with touches of storytelling and Chef Lin’s signature wit.

Beyond the set menus, the a la carte selection features premium ingredients such as Akamutsu (rosy seabass), Kinki rockfish, and Kinmedai red snapper. There are also nine handroll options, including a decadent wagyu and caviar roll and another with scallop and truffle. Dessert brings thoughtful finishes like Yuzu Baked Cheesecake and Uji Matcha Mont Blanc cake.

Prior to opening Koete, Chung and Chen were known for running boutique hotels and neighborhood cafés. But it was a formative trip to Japan that inspired their dream to open a sushi counter where hospitality shines as much as the fish.

Koete Omakase is located at 1695 Broadway (53rd Street) in Manhattan. It is open daily for lunch (12–2:30pm) and dinner (Sun–Thurs until 10pm, Fri–Sat until 11pm). Reservations are available on Resy.
