Fany Gerson, who owns Fan-Fan Bakery in Bed-Stuy, is adding a special donut to the menu, called ponchiki. It seems the fighting in Ukraine has her, like many of us, thinking of our own history.
“Like most, I have been watching and reading the news with a heavy heart and disbelief. My great grandparents immigrated to Mexico in 1929. They were from different areas - my grandmother (La Donna doughnut was inspired by her) from Annopol and my grandfather from Vinnytzia. I’ve thinking a lot about them, their own history and wanted to contribute in some way so I decided to make these Ukrainian doughnuts that are really cheese fritters called ponchiki, but I am basing them on my great grandmother babi Lena’s blintzes that I love!”
The ponchiki are made with pot cheese and accompanied with sour cream and jam. The will be on sale from March 14th through the 20th. ALL proceeds will go toward the Voices of the Children Foundation, an organization that provides psychological and psychosocial support to children impacted by armed conflict.
