Pine & Polk with Hidden Cocktail Bar Opens in Hudson Square

Pine & Polk, a market and retail shop, has opened in Hudson Square offering specialty provisions like cheese, charcuterie, condiments, fresh floral bouquets, and more.  It is run by two women, Lindsay Weiss (American Express, James Beard Foundation) and Alyssa Golub (Michael Mina, Four Seasons Hotels & Resorts, Craftable) whose paths crossed while living in San Francisco. One lived on Pine Street; the other on Polk Street. Several years later, fate brought them together in New York where they embarked on this latest endeavor.

The shop is bright and airy with natural materials, plenty of sunlight and greenery, and a neutral tone that is accented by a collection of colorful products. In addition to the market goods, there are also grab-and-go options including elevated takes on the classics for breakfast, lunch, and dinner.

Highlights include a Breakfast Bowl with chia pudding, cinnamon sugar swirl, and almond butter; and Nana Joe’s granola and banana. For lunch there is Make It Grain with fonio, lentils, roasted beets and tomato witha garlic yogurt dressing; the Pump up the Jam, a nod to the PB&J with savory house-made nut butter and Brins Cherry Chai Jam; and the Lunch at the Waldorf, a shredded chicken and shaved Brussels sprout sandwich with grapes, walnuts, baby arugula, and basil, to name a few.

The shop is also  highlighting top female talent with special collaborations such as Ayesha Nurdjaja’s (Shuka, Shukette) Whipped Feta Pistachio dip, Carrot Romesco, and Not Your Average Hummus; Esther Choi’s (Mokbar) Napa Kimchi and Cucumber Kimchi; Silvia Barban’s (LaRina) Creste di Gallo Pasta; and Caroline Schiff’s (Gage & Tollner) Dry Fig-Dark Chocolate-Rosemary-Rye Cookies.  Guests can also glass of wine and a bite to eat, Pine & Polk serves a daily by-the-glass red, white, and rosé, as well as mini cheese and charcuterie boards.

And then there is PS, short for Pacific Standard, a hidden cocktail where guests enter through a “secret door” disguised as shelves of artisan chocolate bars.  Inside, the space is dark and moody – with a deep, jewel-toned palette of purples, navys, and greens, and polished finishes of brass and gold.

The cocktail menu includes six reimagined classics, like the High Tea Negroni with gin, Aquavit, sweet vermouth, and an amaro marmalade cracker. The wine program spotlights wines from the West Coast, with an emphasis on female and minority vintners. There are about a dozen by-the-glass offerings, and 30 by the bottle. Craft beers are also available.
