Chef Andre Kang Talks Roasted Chicken at Hainan Jones

At Urban Hawker in Midtown Manhattan, Hainan Jones is serving up Singapore’s most iconic dish—Hainanese chicken rice—in a way that feels both nostalgic and elevated. Owned by KF Seetoh, the street food champion and friend of the late Anthony Bourdain, the stall offers poached, fried, and roasted versions of the beloved dish, all paired with fragrant rice, rich broth, and traditional sauces like lime chili and dark soy.
In our exclusive interview, Head Chef Andre Kang shares why the roasted chicken is his personal favorite: “It’s something I grew up eating,” he says. That connection to tradition, paired with precision technique, makes the Hainan Jones experience stand out at New York’s first authentic Singaporean hawker center.
