Rosevale Kitchen + Cocktail Room, A Lavish New Spot Opens at the CIVILIAN Hotel

Dinner and drinks in a splashy space designed by the Rockwell Group is now open inside Jason Pomeranc’s CIVILIAN Hotel. Rosevale Kitchen and Cocktail Room features a ground floor brasserie-style restaurant with by red leather banquettes and brass accents. A parlor area features Broadway-inspired artwork, and floor-to-ceiling glass cabinets, aged-leather furniture and an antique stone bar top.
Chef Jeannie Glass and Executive Chef Justin Romine have created a menu described as “American with global flavors.” Highlights include Steak Tartare with minced sirloin served with shrimp chips; Steelhead Trout with white wine, poached potatoes & fennel and Gaby’s schug; Seared Duck Breast with wild rice farrotto, kabocha squash purée, and pho spiced orange duck jus; Rosevale Burger made with griddled short rib brisket topped with gruyere, sautéed mushrooms, truffle aioli, watercress, pickled shallots, cornichons, on a toasted brioche bun, served with beef fat fries; and Caviar & Chips - one ounce sterling white sturgeon roe - served with potato chips and dip.
World-renowned mixologist Francesco Lafranconi leads the beverage program. Signature cocktails include Mr. Lee Manhattan (Nikka Coffey Grain, Lillet, orange bitters); The Play (Rosevale’s take on an Old Fashioned with Michter’s US1 Straight Rye, Bacardi Ocho, Falernum Syrup, Bitters); and Spicy Encounter (Tanteo Jalapeno Tequila, Ancho Reyes Verde, Passionfruit, Lime, Agave, Mezcal Float, Spicy Worm Salt).
