Saint Urban Pairs Seasonal Dishes with World Class Wines in Flatiron

Chef Jared Ian Stafford-Hill has brought his acclaimed Syracuse restaurant, Saint Urban, to NYC’s Flatiron District, offering a refined dining experience inspired by the world’s top wine regions. The restaurant now occupies the former Veritas space, where Stafford-Hill once worked, marking a homecoming for the chef and his signature wine-focused approach.

At Saint Urban, guests can choose their own culinary journey with a seven-course tasting menu and optional tiered wine pairings, or a curated four-course dinner menu. Both are designed to spotlight the flavors and traditions of a different winemaking region each month, using peak-season ingredients.

The opening menu highlights spring in Burgundy’s Côte de Beaune. Dinner begins with a glass of Meursault, paired with Meyer Lemon-Cured Danish Hiramasa, finished tableside with a caper and almond broth. A rich Chassagne-Montrachet follows, served with a 4-Year Aged Parmigiano Custard with Morels and Green Garlic. The main courses include Heritage Chicken on a Spit with Chioggia Beets and Rhubarb, complemented by a floral Volnay, and a Beef Duo Bourguignon of short rib and ribeye, paired with a bold Pommard. For dessert, an apricot Eau de Vie accompanies a Chocolate-Apricot Financier.

Saint Urban’s wine program features more than 3,000 bottles, with a rotating pairing menu that changes monthly. This May, guests can enjoy a special tasting of three generations of Domaine de Montille wines.

Designed by Bentel & Bentel, the restaurant’s interiors reflect the world of winemaking, with natural wood, earth tones, and subtle vineyard-inspired details.

Saint Urban is now open for dinner Tuesday through Saturday at 43 E 20th St. Reservations are available on Resy.
