Ice cream cakes, cookie sandwiches, and why Park Slope might be just the beginning!

If you’ve wandered past the sunny corner of 7th Avenue at the intersection of 1st and 2nd Street in Park Slope recently, you’ve likely seen the line. Families, strollers, dogs, and date-night duos all gathered for a scoop—or maybe two—of nostalgic-meets-modern goodness at Heap’s Ice Cream. But this spring, the neighborhood favorite is upping its game in a big way with the debut of new homemade ice cream creations, dreamed up in part by Sarah Sanneh, partner in Heap’s and co-owner of Pies ‘n’ Thighs.

"We're really excited to introduce our homemade ice cream sandwiches and ice cream cakes," said Sanneh in an interview with Cititour.

The cakes come stacked with bold flavors like Vanilla Chip with whipped confetti cream or Chocolate Fudge with devil’s food cake and layers of fudge and vanilla fudge ripple ice cream. And the sandwiches? Think classic, but elevated—like salted caramel ice cream tucked between English butter toffee cookies.

The new menu additions are a natural evolution for Heap’s, where every detail, from Hudson Valley dairy to whimsical flavors like Mango Sticky Rice, is rooted in quality and joy. And according to Sanneh, this might just be the beginning.

“There are lots of neighborhoods that would love to have a high-quality, nostalgic ice cream shop as a place for their community,” she said. “I think as wonderful as it is having this totally perfect corner, we could also have perfect corners in other neighborhoods.”
