Smør Bakery Expands With a Test Kitchen in Williamsburg

Smør, the Scandinavian-inspired café known for its beautifully crafted breads and pastries, is opening a new chapter in Williamsburg. Launching June 25, Smør Bakery & Test Kitchen is more than a bakery—it’s the brand’s creative core. This hybrid space will serve as both a neighborhood favorite and a playground for recipe development, offering limited-time specials, seasonal sandwiches, and pastries guests won’t find at any other Smør location.

Led by founders Sebastian Perez and Sebastian Bangsgaard (above), alongside Head Baker Rowan Gill (formrly of Bien Cuit), the team is blending deep-rooted Danish tradition with a forward-thinking spirit. Expect inventive spins on classics like Hindbærsnitter and BMO (a Danish cheese roll), plus rotating smørrebrød, cakes in R&D (like a modern Princess Cake), and pantry goods from Copenhagen to local producers. Their mission? To evolve the Smør experience from the inside out.

Located at 155 Powers Street, the sleek, 3,000-square-foot space includes open kitchens and indoor/outdoor seating for 16. The daily menu features signature sourdoughs, new loaves made with grains like Danko rye, and savory dishes such as cheesy breakfast burritos and quiche with tarragon aioli. It's all paired with standout drinks like strawberry matcha and fresh watermelon juice.

Smør Bakery & Test Kitchen is now open Wednesday through Sunday, 8am to 5pm, and will expand to daily service beginning July 14. Whether you’re swinging by for a loaf or watching the next big thing come out of the oven, this is the place to taste the future.
