Tom Colicchio Reinvents Craft Ahead of Its 25th Anniversary

Tom Colicchio’s Craft has been a fixture of New York’s dining landscape since 2001, earning a James Beard Award, a Michelin star, and a permanent place in the city’s culinary history. But this week marks a bold new chapter: for the first time in 24 years, Colicchio is overhauling the restaurant’s format and flavor, shifting away from its traditional family-style service to a more expressive à la carte and tasting menu experience.

The new direction reflects what Colicchio himself is most excited to cook today, offering a deeply personal interpretation of seasonal, ingredient-driven cuisine. While beloved signatures like the Braised Short Rib will still be available in large-format presentations, much of the menu is entirely new—crafted with support from Chef de Cuisine Grayson Altenberg and Advanced Sommelier Cheron Cowan, who oversees the award-winning beverage program.

This evolution comes just ahead of Craft’s 25th anniversary in spring 2026 and builds on its remarkable legacy: a James Beard win for Best New Restaurant in 2002, inclusion in Esquire’s Best New Restaurants list, and repeated praise from The New York Times, which recently named Craft one of the food moments that helped define New York City in the 21st century.

With this reimagining, Colicchio isn’t just celebrating Craft’s past—he’s reinvesting in its future, bringing a renewed sense of creativity and purpose to one of NYC’s most iconic dining rooms.
