Grand Salon at Baccarat Hotel New York![]() ![]() Cuisine: French Summary: Two Michelin-starred chef Garbiel Kreuther is now in charge of the culinary program at New York's Baccarat Hotel. Kreuther is overseeing all of the hotel's dining options including the Grand Salon, with Alsatian-inspired cuisine using classic French technique. Dinner options include Petit Pâté Feuillété "Baccarat" featuring duck, guinea hen, foie gras, veal and green salad; Handcrafted Quail & Pistachio Ballotine with green cabbage & gruyere salad; Slow-Poached Organic Farm Egg "In A Jar" with Maine lobster, salsify & lobster froth; Smoked Eel Croquettes with harissa aioli; and Burger a la Façon "Rossini:" a black angus patty, liverwurst, grilled red onion, comté cheese and black truffle sauce (optional additions include bacon and foie gras terrine). For dessert, there is Baba for Two with aged rum, whipped vanilla mascarpone and gold leaf.
