Piedmont cake (pistachio, almond, hazelnut spongecake) with Amaretto syrup, layered with Sicilian pistachio Bavarian cream

White Chocolate mousse over a raspberry guimauve (light marshmallow)

Strawberry Mousse on a layer of lemon pound cake topped with raspberry jam roulades
