Where Mulberry Street meets Canal, at the tip of Little Italy, you will find Zia Esterina Sorbillo. The small shop is named after world class pizzamaster Gino Sorbillo whose family has been making pizza in Naples since 1935. Now, Sorbillo has his first restaurant in the United States serving authentic Neapolitan pies and pizza fritta. There is a tiled pizza oven in the back, but the centerpiece is a cauldron of boiling oil where the pizza fritta, similar to a calzone, is fried right before your eyes. The dough is rolled out. Fillings like creamy ricotta, tomato sauce, fresh basil and prosciutto are added. It's then wrapped up and dropped into the oil until it's all bubbly and golden brown. The finished product is like eating a giant pizza-filled zeppole. Zia Esterina Sorbillo also serves slices and whole pies made with an ultra-thin crust. But it is the pizza fritta that is the true prize. Eat in or have it wrapped up for piece of Italy on the go.
