Maxim’s de Paris is making an appearance at The Norm to complement the Brooklyn Museum’s Pierre Cardin: Future Fashion exhibit. Maxim’s at the Norm will open for a five-and-a-half-month run starting July 20 with seating for 80 guests as well as another 30 on a terrace overlooking the museum’s sculpture garden. The restaurant itself will get the Maxim look with deep burgundy and gold accents reflecting the art nouveau interior of the original which opened in 1893. Executive Chef Saul Bolton has created a special French menu to mark the occasion, including à la carte options like Gougères, Steak Frites and Marquise de Chocolat. A $45 three-course prix fixe menu will hightlight contemporary versions of dishes from the Maxim’s de Paris cookbook, Chez Maxim including Salade Lyonnaise (seasonal greens, bacon lardons, croutons, and poached egg); Poulet Rôti aux Pêches (roast chicken, grilled peaches, baby arugula with chimichurri sauce); Coquilles Saint-Jacques (pan seared scallops, oyster mushrooms, artichokes, escarole with a white wine sauce); and Profiteroles (vanilla ice cream, praline, warm chocolate sauce). All of the dishes will feature farm-fresh ingredients from regional markets. Cocktails, meanwhile, are inspired by the life of Pierre Cardin and include Le Costumier, or The Costume Maker (champagne, St. Germain, gin, lemon juice, hibiscus lime syrup), and The Tailor’s White Sangria (white grape juice, pomegranate vodka, Triple Sec, simple syrup, honey, pinot grigio).
