Passerine, at 36 E 20th St in NYC’s Flatiron, is where Michelin-starred Chef Chetan Shetty’s culinary roots meet the city’s seasonal flavors, creating a sensory experience that’s as unique as it is personal. Chef Shetty’s signature is woven through the entire menu, inspired by his mother’s spice blends from Pune, India.

Expect dishes like the Kolhapuri Lamb Tartare with bright citrus and shiso; Naga Pork Belly paired with earthy fermented beans and charred broccoli rabe; and Chicken Saagwala for Two offers, a hearty, flavorful experience combining crispy chili and garlic. Each plate is a story, balancing bold Indian spices with fresh local ingredients, from Greenmarket-sourced maitake mushrooms to tender winter squash in a luscious buttermilk pulissery.

Drinks are equally inventive, designed by Bar Director Mario Castro, whose past roles include curating at Michelin-starred Atera. Cocktails like the Singing Lark blend spiced pear, peach, and a touch of chili, while the Green Magpie stirs together Asian rum with saffron and cilantro for a lively kick. Each drink is as curated as the menu, with flavors that complement the intensity of Chef Shetty’s dishes.

To finish, Pastry Director Michael Werrell’s creations bring an exciting close, from a Big Apple Gulab Jamun with hints of coriander and yogurt to the delicate Pistachio Cremeux infused with chai and rose. With restaurateur Maneesh K. Goyal (Temple Bar) at the helm, Passerine promises a vibrant, soulful New York experience that elevates Indian cuisine in unexpected, unforgettable ways.
