Boots & Bones Brings Southern BBQ to Jersey City

Boots & Bones, an all American BBQ restaurant, is now open in Jersey City. Founded by the team behind New York’s acclaimed Chinese Tuxedo and The Tyger, Boots & Bones explores the flavors of Southern barbecue with Executive Chef and Pitmaster Kenny Callaghan.

Chef Callaghan brings two decades of experience with Union Square Hospitality Group and the knowledge he gleaned from his extensive travels tasting every style of BBQ throughout the country as he developed Blue Smoke and its spin-off. Callaghan also founded The Big Apple Barbecue Block Party which brought pitmasters from across the country to New York City for 18 years.

At Boots & Bones, two massive smokers have been install to create some of the finest barbecue in the Northeast, including St. Louis Ribs, Pork Shoulder, Beef Brisket, Smoked Chicken, Smoked Sausage, and more—all served family style.

Visitors will also find starters like freshly shucked East & West Coast Oysters; Gulf Shrimp Cocktail; and PEI Mussels with Chorizo. Mains include Low Country Gulf Shrimp & Blue Corn Grits; Chopped Pork on Brioche; Faroe Island Salmon; Black Angus Burgers; and for vegetarians, Chef Callaghan has created Smoked Nut-Crusted Tofu Kebabs. Sides bring Pork Rind-Topped Mac & Cheese, Sesame Cole Slaw, Smoked Pit Beans, and Corn Bread. For dessert, there is Key Lime Pie or Warm Apple Crisp.

BBQ-Friendly cocktails can also be found like the signature Smoked Old Fashioned; a vodka Medusa, and the Hemingway Daiquiri. A barrel-aged libation called Under The Boot is a Negroni in disguise. There is also a gin Prickly Collins.

Boots & Bones is also opening a clandestine and inclusive social club, also called Under the Boot, found at the foot of a secret stairway lit by a glimmering neon logo. With a custom cocktail bar as its centerpiece, and plush, dark green leather banquettes, visitors will be able to explore a deep library of hard-to-find bourbons and other spirits.

Much of the decor is sourced from the team’s travels to Texas and other parts South including Western wall coverings that embody the history of the Old West, along with barrel-shaped chandeliers.
