Casa Bond, a stylish new restaurant serving classic Mexican fare is now open at 344 Bowery. The restaurant is focusing on lively regional dishes from the Mexican Riviera to the mountains of Sinaloa and Central Mexico.

Executive Chef-Owner Rodrigo Abrajan began his culinary journey with a humble taco pushcart in 1993 which has grown into three full-service restaurants.

Start with Caviar Guacamole offered with a choice of ½ gram or 1 gram of Imperial Osetra caviar, Lobster Guacamole and several types of ceviche. Tacos include Baja Fish with whitefish, cabbage, avocado, pico de gallo, and habanero aioli, and the Governador with shrimp, steak, chihuahua cheese, and chiltepin-tomato.

Entrees bring Duck Confit served with a signature mole made from 24 ingredients; Cochinita Pibil, pork shoulder wrapped in banana leaf with achiote paste, habanero, and chile tetemado; and Pescado Zarandeado, broiled butterflied branzino marinated in annatto-guajillo, and served with hand-pressed tortillas. Desserts offer fun twists on classics like churros filled with caramel mousse and decorated with green and yellow striped chocolate, and a diamond-shaped Tres Leches pastry filled with marzipan.

Cocktails also take a route through Mexico with the Deluxe Margarita made with Casa Dragones silver tequila, produced by the first woman-owned distillery in Mexico, Cointreau, fresh lime juice, and agave nectar; and Señor Bond, a play on the Old Fashioned, using Woodford Reserve bourbon, aromatic bitters, smoked maple, and Amarena cherries.

A unique beverage cart outfitted with 15 premium tequilas offers drinks tableside like XXIV Karat cocktail garnished with 24-Karat gold flakes and activated charcoal foam.
