Cora: A New-American Wine Bar Opens in the West Village

Cora, the New-American wine bar, has opened in the heart of the West Village at 20 Cornelia Street. Founded by an accomplished trio—sommelier Emmeline Zhao, executive chef Joseph Bliffen, and pastry chef Janice Sung, all veterans of the acclaimed restaurant Figure Eight next door—Cora offers a creative, seasonal menu with a strong emphasis on North American wines. The restaurant’s name, meaning “heart,” pays tribute both to Cornelia Street and to its warm, welcoming atmosphere.

Cora’s culinary team boasts an impressive resumé. Managing partner Emmeline Zhao, who worked with legendary chef Wyle Dufresne, was the force behind Silver Apricot and Little Tong Noodle Shop. Executive chef Joseph Bliffen honed his craft at renowned spots like Pizza Motto and Lunetta, while pastry chef Janice Sung brings her expertise from Michelin-starred kitchens like SAGA and One White Street.

The trio, also behind the popular Southern seafood restaurant Figure Eight, has crafted Cora’s menu with playful, personal interpretations of classic dishes. Expect starters like Sunflower Pull Apart Rolls, Tomato ‘Caesar,’ and Beef Tartare, followed by creative plates like Berkshire Collar with cabbage and Asian pear, and Whole Trout Milanese with smoked gribiche and watercress.

Cora’s wine program, curated by Zhao, is among the largest in the city to focus on North American producers, with a particular emphasis on wines from women and BIPOC winemakers employing sustainable practices. Nearly 20 wines are offered by the glass, rotating regularly, creating an ever-evolving experience.

A curated cheese and desserts section features Moses Sleeper with grilled grapes, pickled currants, and elderflower vinegar, Sweet Corn Ice Cream with plum jam and salted plum, and Olive Oil Cake served with market fruits.

Housed in the former Silver Apricot space, Cora brings an intimate, cozy vibe with a 7-seat bar overlooking the bustle of the West Village, an intimate dining room, and a heated backyard patio perfect for year-round dining. With its blend of innovative cuisine, curated wines, and intimate design, Cora promises to become a destination for food and wine lovers in the West Village.
