Corima Reveals Exciting New Tasting Menu by Chef Fidel Caballero

Corima, the acclaimed modern Northern Mexican restaurant helmed by chef and owner Fidel Caballero, will launch its new 9-course tasting menu, on September 24th. It is Cabellero's first major changes since opening and being named one of Bon Appetit's Best New Restaurants of 2024.

Known for a culinary approach that reflects the Northern Mexican concept of 'corima,’ or sharing within a community, the new menu showcases all new dishes with the exception of Cabellero's hit, Tortilla.

Featured dishes include:

  • Squid Ink Buñuelo with beef tartare, bone marrow, and caviar
  • Branzino Collar with chintextle tare, a smoked chili paste originating in Oaxaca.
  • Nicuatole (ground maize) with red crab and cacahuazintle, a variety of white maize from Toluca, Mexico
  • Shrimp Chicharron
  • Kampachi Aguachile with sansho pico de gallo and celtuce, a type of thick stemmed lettuce
  • Potato with chile chilaca, cockles, and huitlacoche, a fungus that feeds on corn
  • Turbot with totomoxtle (heirloom corn husks) dashi and mushroom
  • Tripe Taco with woodear mushrooms, chile de arbol, and green tomato
  • Duck accompanied by sunchoke pipian rojo, nixtamalized sunchokes
  • And a Rompope dessert with pink guava and pecan.

The menu, which reflects Chef Cabellero's regional legacy and global culinary influences, is priced at $110 per person and can be reserved via Resy.
