Flatiron's Thyme Bar Launches Guest Bartender Series with Can Bese of Romeo's

Thyme Bar, the Flatiron speakeasy known for its theatrical cocktail experiences, debuts its Guest Bartender Series with Can Beşe, who presents a deeply personal 4-course journey through Turkish culture and New York life. Beşe honed his craft at Istanbul's renowned Joker No. 19 before becoming head bartender at Romeo's, the acclaimed West Village destination known for its retro vibes and creative cocktail program.

The menu, entitled Simply Human, includes:

  • Sunday Bazaar: Bergamot-infused whiskey with sheep's yogurt, candied mint, and chopped walnut, paired with muhammara stuffed pepper.

  • Street Meat: This cocktail features house-fermented salgam suyu, a Turkish beverage made from beets, turnips, carrots, salt, bulgur wheat, and chilis. It is paired with spiced goat and roasted turnip.

  • Glass Coffin (above): Inspired by Beşe’ grandfather, who wished to spend the afterlife in the seaside village of Çökertme, this Aegean-inspired 50/50 martini blends Mediterranean herbs, Martini Bianco vermouth, blue algae, and olive oil, capturing the essence of the sea. It is followed by lentil soup and charred eggplant with dill yogurt.

  • Colors of Night City: Clarified milk punch cocktail paired with Bergamot Turkish delight.

The event will be held January 7 to February 2 with multiple seatings per night from 5pm to 10:30pm for $85 per person (non-alcoholic options available). Reservations via Resy
