Home-style Puebla Cooking Arrives at The Zumbador in Queens

The Zumbador, a new Mexican restaurant from husband-and -wife team Fernando Adan and Maria Bravo, is now open in Ridgewood, Queens inside the Nowadays event space [56-06 Cooper Ave, between Irving and Wyckoff Avenues]. The menu delves deep into their native Puebla region with family favorites, tried and tested over generations in Mexico and now recreated here in New York. The couple also get their food cred from stints at such establishments as Keith McNally’s Pastis and Cherche Midi and Bed-Stuy favorite Saraghina.

The menu begins with appetizers such as Chapulines, a traditional Mexican delicacy of toasted grasshoppers, seasoned with a salt, chile flakes and lime juice; and Papás Cambray, roasted potatoes drizzled with lime juice and sprinkled with crumbled cotija cheese, crushed red pepper and cilantro. There are traditional soups like Pozole, hearty corn and tender pork, garnished with sliced radishes, crisp iceberg lettuce, and fresh herbs; and Sopa Milpa Poblana, with Mexican pumpkin, sweet elote, poblano chili, onions, and epazote herbs.

Tacos include Ensalada Crujiente, shredded flank steak mixed with a variety of fresh vegetables such as tomatoes, radishes, cilantro, and onions on a crispy tortilla. Platos Fuertes (featured dishes) include El Rey (Mole), tender chicken served with a rich mole sauce made from dark chocolate, peanuts, raisins and dried chilies; Corteza de Cerdo, ribs served with a zesty green sauce made from tomatillos, jalapeños, garlic and cumin; and Torta de Milanesa, a hearty sandwich filled with thinly sliced breaded and fried chicken with tomato, lettuce, onions, mayonnaise, jalapeños, avocado, and Oaxacan cheese.

Desserts like Buñuelos, sweet and crispy fried tortillas, dusted with cinnamon sugar and served with a caramel sauce; and festive Tres Leches, sponge cake soaked in a trio of milks (condensed milk, evaporated milk, and heavy cream) round out the menu.

The beverage menu is centered around mezcal and tequila with cocktails such as the Picante Margarita, with jalapeno infused tequila, lime, triple sec, and grapefruit; El Diablo with reposado, creme de cassis, lime, and ginger; and Pineapple Sour, with mezcal, lime, pineapple and angostura bitters.

The Zumbador is open Tuesday - Wednesday from 5pm-11pm, Thursday - Friday, from 5pm-10:30pm and Saturday from 12pm-10:30pm, with reservations available on Resy. For more information visit www.thezumabador.co
