Kinjo Brings a New Omakase to Former Torpedo Factory in DUMBO

Under the Manhattan Bridge at 11 Adams Street, Kinjo, a new 13-seat omakase counter and cocktail lounge, is set to become DUMBO’s next must-visit. At the helm is chef and co-owner Johnny Huang, a 17-year veteran of Japanese cuisine with expertise spanning traditional kaiseki, kappo, and omakase, along with Japanese-French pastry.

As a former sushi chef at Masa for five years, Huang also played a key role in launching Bar Masa & Shaboo in Las Vegas, bringing a wealth of experience to Kinjo’s culinary offerings.

The 11-course omakase menu presents a range of dishes that highlight East Asian flavors, including Kumamoto oysters topped with ikura, botan ebi with curry glaze, and koji-cured duck with pineapple hoisin, all for an accessible price of $95.


The creative cocktail menu features drinks like the Salty Plum Margarita, Blue Wave and Shiso and Peach Highball, alongside a custom sake crafted in partnership with Brooklyn Kura.

Designed by KIMOY Studios, Kinjo’s setting pays homage to its industrial past, featuring original wood beams, exposed brick, and a welcoming stone bar. Co-owner Alex Lee, along with longtime DUMBO residents David Liu and Dan Chiu, aim to make Kinjo—meaning “neighborhood” in Japanese—a vibrant destination for locals and newcomers alike.
