Lala’s Brooklyn Apizza, a new rooftop restaurant and bar from Lauren and Joe Grimm, the husband and wife duo behind the award-winning brewery Grimm Artisanal Ales and sister Physica Wines, is opening in East Williamsburg at 990 Metropolitan Avenue.

Pulling inspiration from New Haven style pizzas, some of their favorite Brooklyn pies, and the pizzas they make at home with their kids, Lauren and Joe have created their own pizza dough utilizing the same spontaneous fermentation that gives Grimm beers their unique flavor profiles. The thin sourdough pizzas are cooked in a wood-burning pizza oven sourced from Italy.

Specialty summer pizzas include Hot Pepperoni with tomato sauce, pepperoni, serrano chilis, and honey; Clam with local little neck clams, aged mozzarella, garlic, Physica Riesling butter sauce, and fresh parsley; Squashed with summer squash medallions, squash blossoms, egg yolk drizzle, ricotta, and cracked black pepper; and Cozy with mashed potatoes, bacon, and fermented tomatoes.

While the bulk of the menu is seasonal, Lala’s is also offering two year-roumd New Haven-style pies - Red with tomato sauce, garlic, oregano, pecorino, olive oil; and White made with fresh mozzarella, garlic, oregano, pecorino, olive oil. These can be customized with toppings that longtime connoisseurs of apizza will recognize, such as mashed potatoes, bacon, and clam, as well as locally-sourced ingredients like serrano chilis, honey, and basil.

For dessert there are Malted Chocolate Chip Cookie with freshly milled malt wheat and flaked sea salt and Gelée made with Physica Riesling and Physica Merlot with orange zest.

Located atop the brewery & taproom, the airy indoor-outdoor space offers views of nearby Cooper Park and the Kosciuszko Bridge. Design elements include cerulean blue and emerald green tilework and biergarten-style long tables and benches. Additional seating is also available at the rounded terracotta bar, which is topped with rustic black granite.

Lala’s Brooklyn Apizza is ope Friday and Saturday from 3pm -10pm; and Sunday 1-8pm. For more information please visit grimmales.com/lalas
