NYC’s First Burekas-Only Shop Lands in the Village

A new era of flaky, golden pastry glory is here. Opening April 3rd on Bleecker Street, BUBA Bureka is the first shop in New York City fully dedicated soley to the bureka—a beloved Mediterranean and Middle Eastern hand pie with buttery layers of flake golden pastry and deeply comforting fillings.

Chef Ben Siman-Tov (aka BenGingi) brings his playful, ingredient-driven approach to the menu, offering burekas stuffed with everything from Dutch potatoes and caramelized onions to gooey gouda, feta, and ricotta. There’s even a corn bureka, nodding to sweet American summer vibes, and a spinach-artichoke version that riffs on the classic dip. Each is served with tahini, crunchy pickles, and a hard-boiled egg for the full experience.

Co-founded by Siman-Tov, Breads Bakery founder Gadi Peleg, and hospitality vet Fritz Oleshansky, BUBA Bureka promises more than just incredible pastries. With seasonal specials and guest chef collabs, it’s designed to be a creative, welcoming corner of Greenwich Village where burekas take center stage.
