Newly Installed Chef Geo Park Puts His Stamp on the Menu at Hortus

Chef Geo Park, formerly of Michelin-starred Jua, is making his mark at Hortus NYC (271 Fifth Ave) with dishes blending the flavors of China, Japan, Korea, and Southeast Asia with subtle European twists.

The result are dishes offering cross-cultural flair like Flat Pasta, a large raviolo with ricotta mushroom filling accompanied by pickled portobello mushrooms, grilled white asparagus, bonito, and chives; and King Crab Noodle, fettucine in cream sauce with mala, shallots, and scallions, topped with shredded king crab.

Mains include Cod with a gochujang crust served over lobster risotto with charred spring onion; and Braised Short Rib served with daikon ecrasé and roasted baby carrots.

The dishes pair perfectly with the extensive wine program and low-ABV, Soju-based cocktail program at Hortus curated by Managing Partner Suhum Jang, formerly of Per Se, Daniel and Jungsik.
