Down the escalator on the lower level of Saks Fifth Avenue you will find Hoseki, New York City’s newest upscale sushi experience. It’s on the same floor where fine jewelry and watches are sold. But to get there you will have to enter a small room known as “The Vault” where returns are made.

Look to the right and you will see an oval-shaped curtain. It is here where you will find Hoseki, a six-seat sushi counter offering a 12-course omakase. Managing Partner Maxwell Weiss, who spearheaded the idea, says Hoseki stands for “little gem,” so it’s only fitting that it is located adjacent to the jewelry department at Saks.

Preparing the sushi is Chef Daniel Kim who is the former head chef at Sushi by Bou and has worked at other Japanese restaurants, including Sushi Zo, and as the private sushi chef for the investment firm, Nomura.

The 12 courses begins with fluke with Yuzu. Ocean trout, Albacore Tuna marinated with sake and Sea Bream with truffle sauce also make appearances; among others. Much of the seafood is imported directly from Japan. The meal ends with a slice of wagyu beef torched on both sides and a handroll filled with tuna and shishito peppers.

At one point we could hear a customer haggling over a return just outside the curtain which is part of the fun of Hoseki. Right now, sparkling juices and spritzes are offered as the restaurant waits for its liquor license to arrive. Weiss says he hopes to expand Hoseki to additional Saks' stores in the future and possibly beyond.

Hoseki is located inside Saks Fifth Avenue at 611 Fifth Ave, New York, NY. The cost of the Omakase is priced at $95 and available on the hour from 12 noon to 3pm Wednesday through Saturday. Reservations are available via Resy.
