Three Maples is the collaborative effort of three friends - chefs Matthew Lief, Michael Felix, and Maria Dela Cruz. The three worked together at Landhaus - a Smorgasburg and Berg’n favorite – before opening this new spot at 1452 Fulton Street in Bed-Stuy.
Lief says the mission is to create unfussy, delicious and fun food. Their signature dish is maple glazed, thick-cut bacon on a stick. The food also reflects their cultural backgrounds - Mexican, Korean, Filipino, and Jewish.
That can be found in dishes like the house burger, made with a custom short rib blend from Pat LaFrieda (or plant-based patty); a spicy fried chicken sandwich; and fish and chips. All are served with a side of crispy fries or a side salad. There are two salads - a market salad and a Caesar - with options to add several proteins including their housemade lardons. Sides to round out a meal include charred baby broccoli with garlic confit; blistered shishito peppers with yuzu vinaigrette; and crispy fries served with chipotle mayo and dill ranch sauce for dipping.
There are seven cocktails, inspired by classics and created by friend of the team, Jeff Kay, a veteran of The Astor Room and Sushi Samba. The house specialty cocktail is the Triple M, with brown butter washed bourbon, Berkshire maple syrup, and orange bitters. Natural wines and craft beers, mostly from from NY are also offered with ten different beers on tap at any given time.
The space designed by husband-and-wife team, Joe Malbouef and Tiffany Bowie, of MB Architecture evokes a classic New York bar with a modern, bright aesthetic.
Three Maples is first come, first serve, and open Wednesday - Sunday for happy hour and dinner. During happy hour from 4 - 6 p.m., a burger and a draft beer are $15; cocktails are priced at $10; wine by the glass is $10; and draft beers are $1 off. Weekend brunch is planned to begin this spring.
