Thyme Bar is Turning the Holiday Season Upside Down

Step into the enchantment of Thyme Bar this holiday season, where the historic pre-war cellar morphs into an intimate dining haven from December 3rd through January 5th. This $175 four-course experience marries boundary-pushing creativity with nostalgic warmth, courtesy of Bar Director Erin Gabriella (formerly of ILIS) and Executive Chef Max Loflin (previously of Huertas, August, New Orleans).

The evening begins with a medley of five whimsical appetizers—house-made saltines, cornbread madeleines, deviled egg trifle, pimento cheese and pickled shrimp— paired with creative concoctions like the "Green Bean Casserole" cocktail which incorporates clarified cream of mushroom soup and a crispy onion garnish.

For the main course, traditional flavors are luxuriously reimagined. Think ribeye cap with tangy pickled onions and duck roulade with wild mushroom duxelle, offered with a stuffing panna cotta with cranberry gelée. Gabriella’s pairing prowess shines with an herbaceous chicken-infused Cosmo Sour or a decadent duck-fat-washed Apple Brandy Cocktail.

Other unexpected delights also punctuate the meal like the 3D-printed cranberry jello shots and brandy apple pie granita. A show-stopping tableside flambé features a “Fire Roasted Sweet Potatoes” cocktail made with smoked ube, taro, bruleed marshmallow, and smoked coconut cream.

As the final toast, an “Exit Amuse” cherry pie-inspired flip cocktail arrives with the check, featuring whole egg, cherry vodka, and biscotti—designed for those who are full but still crave one last bite of the classic cherry pie.

Sustainability also takes center stage with waste-reduction techniques like turning pot likker from braised mustard greens into a cocktail base and leftover bread into brioche syrup. "It’s all about creating surprises while honoring those nostalgic, heartwarming flavors,” says Chef Loflin.
