Tsuta Brings its Prized Ramen to NYC

Tsuta, the world’s first Michelin-starred Ramen founded by Chef Yuki Onishi, now has an outpost in DUMBO. Tsuta is known for its unique Dashi or soup broth, oils and sauces filled with umami. The stylish restaurant looking onto the Brooklyn Bridge features counter service in front of an open kitchen, as well as table seating.
The menu features five types of Ramen including Tsuta’s signature Truffle Shoyu Soba with black truffle sauce, white leek, mitsuba, bamboo shoot and Kurobuta Chashu. The soup base is a combination of chicken, fish and clam stocks cooked separately and combined before serving. There’s also a version made with white truffle oil and a green olive sauce. Other options include a decadent Tonkotsu Soba with Kurobuta Chashu made with a pork bone and kombu soup base. A spicy vesion gets Mala minced pork, crushed peanuts, goji berries and wood ear mushrooms. A vegetarian miso soba is also offered.
Visitors are also encouraged to add toppings such as Ajitama (seasoned soft-boiled egg) and Iberico Chashu (roasted sliced Spanish pork), and sweet corn, among others. Small plates are also served like seared pork dumplings, deep fried chicken karaage, and marbled iberico and Kurobuta pork cubes that are charred into crackling and served with a fragrant onion sauce.
Bottled beer, a lengthy sake list, as well as sparkling sake are available. Tsuta is a welcome addition to New York City’s food scene.
