The third time is the charm for Cooper Square Hotel’s street-level lounge bar, the Trilby, a moody, yet versatile space that easily accommodates intimate dates, small parties, and casual meetings over drinks. While low on pretension with its no-reservation policy, the Trilby is the perfect anytime destination for those seeking plenty of food and alcohol options without the dread of worrying about your best laid—but last-minute—plans. The spacious interior has been completely redesigned to give the once formal restaurant a darker, more casual, edge. Recline amid overstuffed leather couches or hang on his every word while perched upon a velvet side chair; either way you’ll be wonderfully sated with chef Michael Gernardini’s European-styled comfort food. Small plate options include warm artichoke dip and country toast ($10), mini short rib sandwiches with Napa slaw ($11), and selections of cured imported meats or cheeses with homemade chutney ($16-$18), all perfect for sharing. Larger entrees, like roasted organic chicken with truffle-smashed potatoes and brussel sprouts ($21) or the Trilby burger with Vermont cheddar ($15), are bound to please both closet foodies and mainstream diners. The Trilby offers wine by the glass or bottle as well as a fun selection of specialty cocktails ($12), including the signature Trilby, a mixture of Dewar’s whiskey, vermouth, parfait amour, orange bitters, and a dash of absinthe to summon an authentic nineteenth-century Bowery bar. For our money we preferred the Bee Sting—Woodford reserve bourbon, Bärenjäger honey liqueur, fresh ginger, with a dash of limejuice and orange bitters. And with seven different (mostly European) brews on tap along with typical bottled imports, everyone’s favorite libations are within easy reach. The Trilby meshes seamlessly within the hotel with its semi-private recesses, gorgeous alcoves, and amazing views. Spring and summer promise even better vistas, including an adjacent outdoor garden, though relative seclusion is mere steps away, which will undoubtedly make this lounge and bar a favorite for feisty flings and sexy summer trysts.
