Bao by Kaya can be found at some New York City food courts. We discovered it a The Feast, a seasonal market located alongside the New York City Pulic Library on Fifth Avenue and 41st Street with stands selling everything from empanadas to gelato. Bao are steamed rice buns that in this case are turned into sliders. We tried the "Cow Bao" with five spice, coleslaw and a fiery Sichuan pepper sauce. Wow. A great pop of flavor. You will also find baos filled with pork belly, Peking Duck and fried tofu. Other offerings include Taiwanese Popcorn Chicken, Szechuan-style fried chicken with black vinegar glaze, and veggie spring rolls.
