Circa Brewing Co. is calling downtown Brooklyn home. Owner Gerry Rooney (of Putnam's Pub) and brewmaster Danny Bruckert (formerly of Sixpoint Brewing) plan to make all of their beer on site with classic and historical brews. They also plan to dabble with some experimental flavors, along with beer-infused cocktails. Along with the beer comes wood-fired pizzas. The dough is being made from flour imported from Italy. Options include the Big Dipper made with truffle béchamel, pig cheeks, melted leeks, and pork jus dipping sauce; and The Choke with marinated artichokes and sweet drop peppers. Seasonal grilled meats and vegetable plates are also being offered. But remember, it's all about the brew!
