Grayson - Southwest, Virginia   
Raw cow’s milk, aged 2-3 months, semi-soft with intense, grassy, earthy flavor. 

Garrotxa - Catalonia   
Raw goat’s milk, aged for 60 days, firm with creamy white interior and a natural grey exterior.

Gran Cacio - Tuscany, Italy   
Pasteurized sheep’s milk, aged 6 months. Hand- salted pecorino cured in vinegar and oil to produce a rich full-flavored cheese.

Landaff - New Hampshire   
Raw cow’s milk, aged for 4-5 months at Jasper Hills Farm, in Vermont.  Mild, semi-firm, cheese with tangy and herbal tones and clean finish.

Riesling Sylvaner - Western Switzerland   
Pasteurized cow’s milk, aged for 14 months, soft ripened with a bloomy rind. Riesling wash produces a light apple flavor.

Pt. Reyes- Northern California   
Pasteurized cow’s milk, full-flavored blue aged for 5-6 months, then cured in a salt wash for 3 weeks.
