Lighter and a more modern approach to Indian cuisine is the idea behind Dalup Modern Indian with a menu devleoped by Bravo's Top Chef alum Dave Martin. Dishes include house-made Naan with Chicken Tikka Masala (that is cashew-milk based) wrapped with cilantro and fresh greens; and a build-your-own "Veggie Karma" bowl with roasted cauliflower, chickpeas, carrots and peas served with a tomato chutney. Grilled kebabs (chicken, pork and lamb) are also on the menu. Dalup is also creating specialty spice blends for its curries and using a robotic Dosa machine to make Dosas to order. Opening in May 2019.
