Created by chef/owner Roberto Santibañez - the nationally celebrated cookbook author, teacher, and restaurateur - FONDA offers New Yorkers a rare chance to enjoy the contemporary urban cuisine you’d find in his native Mexico City. Established in Chelsea in 2014, this location serves devoted followers who appreciate FONDA’s commitment not just as restaurateurs but as resilient members of their community.

FONDA’s food by Santibañez is deeply rooted in the traditions and culinary techniques of his home country, yet he is unbound by them. The result is a menu of refined street snacks, sophisticated riffs o nregional specialties, and an exhilarating array of salsas, adobos, and moles.

All of FONDA’s impeccably balanced margaritas and other agave cocktails are enhanced by fresh, house-made juices and infusions. The bar’s deep selection of spirits (also offered in flights) reveals a knowledge of the subtleties of myriad tequilas and mezcals that equals the skill found in FONDA’s kitchen.
