Fletcher's is honest-to-goodness barbecue.  Brooklyn native Bill Fletcher quit his day job in the advertising business to jump whole hog into the barbecue circuit.  After two years, he, and his partner, former R.U.B Pitmaster Matt Fisher, have opened Fletcher's, a counter service barbecue joint in the up-and-coming Gowanus section of Brooklyn.

The centerpiece of the open kitchen is a fire engine red, 2,600 pound J&R pit, which I'm told took about 20 guys and a crane just to get it into place. Here is where all the magic happens as the barbecue is smoked over red oak and sugar maple from Mesquite, Texas with meats from farms using humane and sustainable farming practices.  The result is some of the finest barbecue in the city. 

Choose from juicy brisket, pork shoulder and St. Louis ribs that are fall-off-the-bone tender.  You can enjoy them in their full smokiness with a spicy dry rub or slather them with their tangy "Red Hook Red" barbecue sauce.  Sides include traditional BBQ favorites like crisp kirby fridge pickles, pit-smoked baked beans, cole slaw and mac-n-cheese.   Add in an ice cold beer or some bourbon and you have the perfect barbecue feast. 

One bite into that brisket or ribs and you will know you have the real deal.  We loved everything we tried at Fletcher's, but most of all we loved the energy behind the counter; folks pouring there heart and soul into food that they clearly love, and it shows.
