Honest, a vegetarian Indian restaurant, has arrived on Bleecker Street in the West Village. The restaurant, which got its start as a humble food car in an open-air market in India in the 1960s now has more than 100 locations worldwide. Honest is known for its use of “honest” ingredients that are never frozen and dishes that are made-to-order from scratch along with signature spice blends. At first they only sold chaat, an Indian snack, before expanding into other dishes.
The West Village location is helmed by Executive Chef Vasisht Ramasubramanian, a former sous chef at Jean-George’s ABC Cocina. The menu begins with signature dishes like, Bhaji Pav, a vegetable curry with a potato base and spices served with buttered dinner rolls—the pav—baked fresh in Honest’s bakery in New Jersey; and Pulav, vegetables and basmati rice cooked in butter with aromatic herbs and spices. The restaurant also serves a large variety of chaat and Indo-Chinese dishes.
