Ichiba Ramen by Shinokubo is a popular spot for Ramen near Union Square.  Four types are offered: Tonkotsu (Pork), Tantanmen (Spicy Chicken), Matcha Shoyu (Vegetable), and Spicy Miso (Oxtail and Bone Marrow). The Tonkotsu features a rich Berkshire pork bone broth and extra thin noodles. It's layered with flavors from an umami garlic base, mushroom, scallions, pickled red pepper, bamboo and pork belly.  A soft boil egg is optional and recommended. Other options include steamed buns with marinated ribeye, salmon teriyaki don, and seasonal poke.   Taco Tuesdays bring two types of ramen tacos.
