Food is a spur-of-the-moment affair a Chef Shaun Hergatt's newest venture, Juni, at the Hotel Chandler. The restaurant's sole intent is to capture the harvest at the height of the season. Hergatt says he is "opening minds and palates" by celebrating nature at its very best with foods sourced from local farms whenever possible. Look for vibrant colors and flavors in a variety of tasting menus ranging from four to ten courses. Think rock shrimp with hot gelée and cucumber pearls, branzino with artichoke and bronze fennel, Peekytoe crab with avocado, quail with black spice, and Berkshire cheek with steel cut oats and a scallion soubise. Desserts are equally as enticing, including one made with frozen meringue, lemon, blueberry and sage. As for the restaurant itself, think modern elegance designed to showcase Hergatt and his team's bountiful creations in what is described as a personal affair between the guest and the chef.
