Nishida Sho-Ten is a tiny noodle shop that delivers big flavors. With just four or five tables and small counter it can be a tight squeeze. The woman behind the counter is loud and brash as she barks out orders, but also friendly and knows the regulars by name. The food is just as interesting. Pork dumplings get a nice crust from the grill. Roast duck and pork belly is served on rice buns. Hard boiled eggs with jammy yolks get a squeeze of anchovy cream. Short ribs lacquered with soy sauce are amazing. But it's the ramen most people come for. There are about a half dozen varieties, most served with a rich broth. I tried the Yaki, fried ramen with bean sprouts and chunks of pork topped with bonita flakes. The prize is the rich broth at the bottom of that pan. Nishida Sho-Ten also has a large selection of sake, including sake shots, which may help explain the festive atmosphere.
