The bounty of the sea is embraced at Oceans, a globally-inspired seafood restaurant by Vancouver's Toptable Group. Executive Chef Andrew Kitko, formerly of Milos and STK, is drawing inspiration from the Atlantic, Pacific and Mediterranean with the freshest catches from sustainable sources, including produce from nearby Union Square Market. Sushi is being showcased at the restaurant's eight-seat sushi bar with traditional and playful creations. Or, dive into the raw bar for oysters, jumbo shrimp, Alaskan King Crab and Maine lobster. Larger plates include Alaskan Black Cod with a sake glaze, Japanese Madai Snapper with mushrooms in a peking duck both and Hawaiian Walu with madras curry and apple-fennel emulsion. A selection of grilled whole fish is also offered daily. For dessert, there are warm cinnamon doughnuts with chocolate caramel sauce and a 16-layer lemon cake.  Signature cocktails, with twists on classics, can also be found along with 10,000 bottles of wine from around the world. The restaurant, designed by The Rockwell Group, boasts a grand open kitchen, lounge and several private rooms for intimate gatherings and large-scale celebrations.
