From serving as Executive Pastry Chef to President Obama, Bill Yosses is now serving as head chef at Palais by Perfect Pie, an all-day cafe on East 61st Street. On the menu there are dishes like Braised Octopus with green beans, black olives and orange, and Flatbread Pizza with roasted tomatoes, buffalo mozzarella and shiitake mushrooms. The Palais Royal Salad brings duck prosciutto grilled peaches and brioche toast with goat cheese.
