Imagine having zero waste. That is the goal of Rhodora Wine Bar in Clinton Hill, Brooklyn. The Oberon Group, which operates sustainable restaurants like Rucola, June and Purslane is overseeing the project. What exactly does it mean? Diners will find a space free of single-use plastics and only products that can be recycled, up-cycled or composted. But that doesn't mean skimping on flavor. In fact, Rhodora is inspired by the tapas bars of Portugal and Barcelona. The menu features things like oysters, tinned fish, antipasti and local cheeses. Rhodora is also featuring only natural wines from mission-driven producers. >>
