Details: The ristoro is a place to rest and eat after a day of hunting. Cinghiale is the wild boar dredded by farmers, but loved out of a wood-burning oven. That is the idea behind Ristoro del Cinghiale where wild boar is the signature dish. Here you will find it in everything from salami, to sausages and pasta. But the menu is far from "boaring." Look for things like rosemary focaccia, light and airy like brioche, served and with lardo. It is really is too good to pass up, as the scent of rosemary fills the restaurant as it is cooked in a blazing brick oven. There are cured meats, including wild boar prosciutto and cheeses that pay homage to Tuscany. Stuffed portobello mushrooms get a layer of melted Parmesan while crostini comes with toppings like housemade ricotta and honey. Also on the menu, marinated squab with cannellini beans, trout with potato gratin and a fire-roasted porterhouse steak. To get a true taste of the wild boar there is the mixed grill with porchetta, sausages and ribs served with roasted potatoes. A large selection Italian wines and negronis are also available. Ciao.
