This Fall, the Sunday Hospitality team (Sunday In Brooklyn's Todd Enany, Adam Landsman, Jaime Young) along with partners JT Vuong and George Padilla (formerly of Okonomi and YUJI Ramen) will be opening Rule Of Thirds, an all-day Japanese restaurant, in the A/D/O creative space by MINI in Greenpoint, Brooklyn. The daytime menu will feature a variety of seasonal bento boxes, as well as snackable onigiri options, as well as a Rule of Thirds riff on Hottokeki (Japanese souffle pancake) served with honey maple butter. The dinner menu will consist of izakaya-style dishes meant to be shared over drinks, as well as large-format options for the entire table to share such as JT’s take on Tonkatsu and Hot Pot, as well as Takekomi Gohan (mixed rice with charred broccoli rabe, yuzu, black sesame). Rule Of Thirds will also practice Mottainai cuisine (being mindful of waste) and this philosophy will be applied through the construction of the menu. Brian Evans (Bar Director for Sunday Hospitality) will lead the creative cocktail program, which will feature a range of American classics that draw on Japanese influence for techniques and flavor. George Padilla will curate the restaurant's sake and natural wine list, which is meant to co-exist and work together to in complementing the food and overall dining experience.
